Kale with smoked sausage


  • Three kale bushes (or a pot with 500 grams prepared  Kale
  • 1 kg potatoes
  • 2 cups of oat meal
  • 1 smoked sausage
  • 2 spoons with fat (or butter, or oil)
  • salt


  1. Remove the Kale leaves from the plants and rinse with water.
  2. Cook it for one hour. Cut the leaves to smaller pieces.
  3. Put the peeled potatoes in a pan, with so much water till they are half in the water.
  4. Put the smoked and washed sausage on it, followed by the Kale.
  5. At last, the oat meal.
  6. Cook this gently for 45 minutes.
  7. If necessary, remove some water and the sausage.
  8. Mash the kale and the potatoes and add the fat or butter.
  9. Add some salt and slices from the sausage.


Kale, originally, grows in Turkey and Greece. In the 6th century b C, Celtic nomads brought it to NW Europe. It was considered as food for poor people, mainly prepared in wintertime.

Sustainability and healthy tips and tricks

  • Use potatoes that are grown in your own country.
  • Use vegetarian sausages. You might even add some vegan bacon.
  • The kale can be served with some vegan mayonnaise and pickles.
  • Only make kale when it is available at your local grocery or use prepared kale in a pot or from the freezer.
  • Instead of fat or butter, you might use olive oil. That is more healthy and plantbased.
